  • 1 pound of ground beef or turkey
  • 1 packet of taco seasoning
  • 1 cup of corn (frozen or canned)
  • 1 cup of black beans (drained and rinsed)
  • 1 cup of diced tomatoes (fresh or canned)
  • 1 cup of shredded cheese
  • Fresh toppings: lettuce, salsa, avocado, or sour cream

Instructions

  1. Begin by cooking the rice according to the package instructions. Set aside once done.
  2. In a large skillet, brown the ground beef or turkey over medium heat until cooked through.
  3. Drain any excess fat and add the taco seasoning, along with the recommended amount of water.
  4. Stir in the corn and black beans, cooking for an additional 5 minutes.
  5. In serving bowls, layer the cooked rice, followed by the meat mixture.
  6. Top with diced tomatoes and shredded cheese, then let them melt slightly.
  7. Finally, add fresh toppings like lettuce, salsa, avocado, or a dollop of sour cream before serving.
