A cozy, protein-packed taco casserole with cottage cheese that’s creamy, flavorful, and perfect for family dinners or meal prep.

Ingredients

1 lb lean ground beef or ground chicken

1 cup black beans, rinsed and drained

1 cup cottage cheese

1 cup shredded cheddar or Mexican blend cheese

1 can (14 oz) diced tomatoes

1 small onion, diced

1 bell pepper, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

6 small corn or whole wheat tortillas, cut into strips

Optional toppings: avocado, cilantro, salsa, fresh lime juice

Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.

2. Cook ground beef or chicken in a skillet with onion and garlic until browned. Drain excess fat.

3. Stir in taco seasoning, black beans, and diced tomatoes. Simmer for 5 minutes.

4. Layer tortilla strips in the bottom of the baking dish.

5. Spread half of the cottage cheese over tortillas, then spoon half the meat mixture on top.

6. Repeat layers, ending with meat mixture.

7. Sprinkle shredded cheese evenly on top.

8. Bake uncovered for 25–30 minutes until bubbly and golden.

9. Let rest 5 minutes before slicing. Serve with avocado, salsa, and cilantro.

Notes

Swap tortillas with zucchini slices or cauliflower rice for a low-carb version.

Ricotta or Greek yogurt can substitute for cottage cheese.

Freeze leftovers in portions for up to 3 months.
