A warm, cheesy quesadilla packed with flavorful chicken, perfect for a quick lunch or dinner.

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or a blend)
  • Taco seasoning (to taste)
  • Optional: sour cream and salsa for serving

Instructions

  1. Begin by warming a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese evenly over the tortilla.
  3. Layer the shredded chicken on top of the cheese and sprinkle taco seasoning to taste.
  4. Add the remaining cheese on top of the chicken, then cover with the second tortilla.
  5. Cook for about 3-4 minutes until the bottom tortilla is golden brown.
  6. Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
  7. Once cooked, remove from the skillet, slice into wedges, and serve with sour cream and salsa.

Notes

For the best texture, use a hot non-stick skillet or cast-iron pan. Store leftovers in an airtight container for up to 3 days.
