  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional for thickness)
  • 1/4 cup water (optional for consistency)

Instructions

  1. Combine the fresh strawberries, sugar, and lemon juice in a medium saucepan. Stir well to coat the strawberries with the sugar.
  2. Allow the mixture to sit for about 10 minutes so the strawberries release their juices.
  3. Add cornstarch if you desire a thicker consistency after 10 minutes. Mix it in with the strawberries.
  4. Pour in the water (if using) and turn the heat on to medium.
  5. Cook while stirring gently until the strawberries soften and the mixture starts to bubble, about 5-7 minutes.
  6. Remove from heat and let it cool slightly before using it on your cheesecake.
  7. Serve the strawberry topping warm or chilled over your cheesecake, and enjoy!
