Delightful cookies that bring the sweet and creamy flavors of strawberry cheesecake in a soft, chewy treat.

  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1 cup chopped fresh strawberries
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, cream cheese, and sugar until smooth.
  3. Add in the vanilla extract and mix well.
  4. Gradually stir in the flour, baking powder, and a pinch of salt until fully combined.
  5. Gently fold in the chopped strawberries until evenly distributed in the dough.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about two inches apart. Bake for 12-15 minutes, until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a dairy-free version, use vegan butter and dairy-free cream cheese. For gluten-free, substitute all-purpose flour with a gluten-free flour blend. Consider adding lemon zest for a fresh flavor twist.
