Ingredients

Scale

Dough:

2 ½ cups all-purpose flour

½ cup milk (room temperature)

½ cup sourdough starter (active and bubbly)

¼ cup sugar

1 large egg

¼ cup unsalted butter (softened)

1 tsp salt

Filling:

2 medium peaches (peeled and thinly sliced)

3 tbsp unsalted butter (softened)

½ cup brown sugar

2 tsp cinnamon

1 tbsp cornstarch

Glaze:

1 cup powdered sugar

2 tbsp milk

½ tsp vanilla extract

Instructions

1. Mix sourdough starter, milk, sugar, egg, butter, and flour until a soft dough forms. Knead until smooth, then cover and let rise until doubled (4–6 hours).

2. Roll out the dough into a rectangle on a floured surface.

3. Spread softened butter evenly, sprinkle with brown sugar and cinnamon.

4. Toss peach slices with cornstarch, then layer them evenly over the dough.

5. Roll the dough tightly into a log and cut into even rolls.

6. Arrange rolls in a buttered baking dish, cover, and let rise until puffy (1–2 hours) or refrigerate overnight.

7. Bake at 350°F (175°C) for 30–35 minutes until golden brown and cooked through.

8. Whisk powdered sugar, milk, and vanilla to make the glaze. Drizzle over warm rolls before serving.

Notes

You can refrigerate shaped rolls overnight for deeper flavor.

Frozen peaches can be substituted if fresh ones aren’t in season (thaw and drain first).

Best served warm with glaze or whipped cream.
