These sheet pan tacos are a quick, flavorful dinner cooked all at once in the oven. Juicy seasoned meat and roasted vegetables come together in warm tortillas for an easy, family-friendly meal.

Ingredients

1 lb ground turkey, chicken, or lean beef

1 large onion, thinly sliced

2 bell peppers (any color), sliced

2 tbsp olive oil

2 tbsp taco seasoning or homemade blend

8–10 small tortillas (corn or flour)

Optional toppings: shredded lettuce, avocado, salsa, cheese, lime wedges

Instructions

1. Preheat oven to 400°F (200°C).

2. Spread ground meat on one side of a sheet pan; scatter peppers and onions on the other side.

3. Drizzle everything with olive oil and sprinkle with taco seasoning.

4. Toss veggies lightly to coat.

5. Roast for 15–20 minutes, stirring halfway through, until meat is fully cooked and vegetables are tender.

6. Wrap tortillas in foil and place on a lower rack during the last 5 minutes to warm.

7. Remove sheet pan from oven and spoon filling into tortillas.

8. Top with your favorite toppings and serve immediately.

Notes

Use lean protein or plant-based crumbles for a vegetarian option.

Homemade taco seasoning blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp garlic powder, ½ tsp salt, ½ tsp black pepper.

Store leftovers in airtight containers up to 4 days in the fridge or 2 months in the freezer.

Reheat filling in a skillet or microwave before serving.
