  • 1 ripe avocado
  • 1 cup fresh strawberries, hulled and sliced
  • 2 slices of whole-grain bread
  • Salt and pepper to taste
  • Optional: Olive oil or butter for toasting

Instructions

  1. Begin by toasting the slices of whole-grain bread until golden brown.
  2. While the bread is toasting, crack the eggs into a bowl and whisk them lightly.
  3. Heat a non-stick skillet over medium heat and add a little butter or olive oil.
  4. Pour the whisked eggs into the skillet and gently stir with a spatula, cooking until they just begin to set.
  5. Season the scrambled eggs with salt and pepper, continuing to cook until fluffy and fully cooked.
  6. While the eggs finish cooking, mash the avocado in a bowl and season it with salt and pepper.
  7. Assemble your dish by spreading the mashed avocado on the toast, topping it with scrambled eggs, and finishing with fresh strawberry slices on the side.
