2 ½ cups bread flour
1 cup warm water
½ cup active sourdough starter (100% hydration)
1 tbsp honey
1 ½ tsp salt
2 tbsp unsalted butter (melted, for brushing)
1. Mix starter, water, and honey until blended.
2. Add flour and salt, stir into rough dough.
3. Rest 30 minutes, then stretch and fold several times.
4. Let dough rise until puffy (about 2–3 hours).
5. Divide into 12 portions, shape into balls.
6. Proof until nearly doubled (1 hour).
7. Bake at 400°F for 20–25 minutes until golden.
8. Brush with melted butter and serve.
Best eaten fresh but can be frozen. Avoid refrigerating as it dries the rolls.
