350 grams bread flour (2 ½ cups)

1. Add water, sourdough starter, salt, flour, and sugar/honey to the bowl of a stand mixer. Mix with a dough hook for 5 minutes.
2. Add softened butter and knead 10–15 minutes until the dough passes the windowpane test.
3. Cover the bowl and let the dough rise until doubled, about 3–4 hours at 80°F.
4. Punch down the dough, turn it onto an unfloured surface, and divide into 12 equal pieces (about 63 g each).
5. Roll each piece into a log 7–8 inches long. Place 6 logs per baking sheet lined with parchment.
6. Cover and let rise 2–3 more hours until puffy and airy.
7. Bake at 400°F for 20–22 minutes until light golden brown.
8. In a small bowl, mix melted butter with garlic powder and Italian seasoning. Brush over warm breadsticks before serving.
