A flavorful and customizable taco bowl that’s quick to prepare and perfect for busy weeknights.

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 3 cups cooked rice or quinoa
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salsa for serving
  • Sour cream for serving
  • Optional toppings: avocado, jalapeños, cilantro, lime wedges

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef or turkey until fully cooked, about 5-7 minutes.
  2. Drain any excess fat and stir in the taco seasoning, mixing well.
  3. Add the black beans and corn to the skillet and cook until heated through, about 3-4 minutes.
  4. While the meat mixture is cooking, prepare the rice or quinoa according to package instructions.
  5. To assemble your taco bowl, spoon the rice or quinoa into bowls, followed by the beef mixture.
  6. Top with diced tomatoes, shredded lettuce, cheese, and any other desired toppings.
  7. Serve with salsa and sour cream on the side, and enjoy your delicious taco bowl!

Notes

For a lighter option, swap ground meat for ground chicken or a plant-based substitute. You can also use Greek yogurt instead of sour cream for extra protein.
