  • 3 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup sourdough starter (active and bubbly)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup warm water

Instructions

  1. In a large bowl, mix the sourdough starter, warm water, and pumpkin puree until well combined.
  2. In another bowl, sift together the flour, salt, sugar, cinnamon, and nutmeg.
  3. Gradually add the dry mixture to the wet ingredients, mixing until a shaggy dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Shape the dough into a ball, place it in a greased bowl, cover, and let it rise for 4-6 hours, or until doubled in size.
  6. Once risen, punch down the dough and shape it into a loaf.
  7. Place it in a preheated oven at 375°F (190°C) for 30-35 minutes until golden brown.

Ensure your sourdough starter is fed and active for optimal results. A cast-iron Dutch oven can help create a crusty loaf. Store the bread in a paper bag at room temperature or freeze slices.
