  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and pumpkin puree until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in chocolate chips.
  6. Drop tablespoon-sized dollops of the dough onto the prepared baking sheets, spacing them a couple of inches apart.
  7. Bake for 12-15 minutes, or until the cookies are set and lightly golden on the edges.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a chewy texture, do not overbake; cookies should be soft in the center when removed from the oven.
