  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, sliced (any color)
  • 1/4 cup fresh basil or 1 tablespoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken with salt and pepper, then add it to the skillet. Brown on both sides for about 5 minutes.
  3. Add minced garlic and cook for 1 more minute, until fragrant.
  4. Toss in cherry tomatoes and bell peppers, stirring well.
  5. Sprinkle fresh basil or Italian herbs over the mixture.
  6. Reduce heat to low, cover, and let simmer for 15-20 minutes until the chicken is fully cooked.
  7. Remove from heat, let it rest a few minutes, and serve warm.

For a low-carb version, replace tomatoes and peppers with zucchini or spinach. For a vegetarian option, use vegetable broth and plant-based protein. Consider adding balsamic vinegar or olives for extra flavor.
