These juicy grilled shrimp skewers are fast, fresh, and full of bright flavor. Perfect for a quick weeknight dinner or a cookout.

  • 1.5 pounds large shrimp (16/20 or 21/25 count), peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (plus extra wedges for serving)
  • 3–4 garlic cloves, minced
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 3/4 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Metal or wooden skewers (soak wooden skewers in water for 20–30 minutes)
  • 1 tablespoon melted butter for brushing (optional)
  • Extra lemon zest for brightness (optional)

Instructions

  1. If using wooden skewers, soak them in water for 20–30 minutes.
  2. Pat the shrimp very dry with paper towels.
  3. In a bowl, whisk olive oil, lemon juice, garlic, honey, paprika, red pepper flakes (if using), salt, and black pepper.
  4. Add shrimp to the bowl. Toss to coat. Marinate for 15–30 minutes in the fridge.
  5. Thread shrimp onto skewers, curling each in the same direction.
  6. Preheat grill to medium-high (about 400–450°F / 205–230°C). Clean and oil the grates.
  7. Grill shrimp 2–3 minutes per side, until opaque, pink, and lightly charred.
  8. Remove from grill. Brush with melted butter (if using) and sprinkle with parsley and lemon zest.

Notes

For extra flavor, try adding spices or herbs according to dietary preferences. Best served hot with lemon wedges.
