High Protein Chicken Ranch Quesadilla

Flavorful and nutritious chicken ranch quesadillas, packed with high protein and creamy ranch taste, perfect for any meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup ranch dressing
  • 4 large tortillas
  • Optional: chopped bell peppers, onions, or other veggies

Instructions

  1. Combine the shredded chicken and ranch dressing in a large mixing bowl. Mix well.
  2. Heat a non-stick skillet over medium heat. Place one tortilla in the skillet.
  3. Sprinkle a layer of cheese on top of the tortilla, then add half of the chicken mixture evenly over the cheese.
  4. Add another layer of cheese on top of the chicken and then place a second tortilla on top.
  5. Cook for about 3-4 minutes until the bottom tortilla is golden brown, then flip carefully.
  6. Cook for another 3-4 minutes until the second side is also golden and the cheese is melted.
  7. Remove from the skillet and let sit for a minute before cutting into wedges. Serve warm with additional ranch or salsa on the side.

Notes

For extra crispness, cook each quesadilla a bit longer but be careful not to burn them.
