Ingredients

  • Bell peppers (red, yellow, green)
  • Zucchini
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Garlic powder
  • Salt and pepper
  • Skewers (wooden or metal)

Instructions

  1. Begin by soaking wooden skewers in water for about 30 minutes to prevent burning while grilling.
  2. Chop all your vegetables into uniform pieces to ensure even cooking.
  3. In a bowl, mix olive oil, garlic powder, salt, and pepper.
  4. Toss the chopped vegetables in the oil mixture until well coated.
  5. Thread the veggies onto the skewers, alternating colors and types for a colorful display.
  6. Heat your grill to medium-high. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  7. Once the veggies are tender and have grill marks, remove them from the grill and serve warm.

Notes

For added protein, you can include marinated tofu or halloumi cheese cubes on the skewers. Store leftovers in an airtight container for up to 3 days.
