Ingredients

  • Bell peppers (red, yellow, or green)
  • Zucchini
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Salt
  • Pepper
  • Optional: garlic powder, balsamic vinegar, or choice of herbs

Instructions

  1. Start by washing and cutting your vegetables into bite-sized pieces.
  2. In a mixing bowl, toss the veggies with olive oil, salt, pepper, and any additional seasonings.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Skewer the vegetables onto skewers, alternating types for a colorful presentation.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  6. Grill until the veggies are tender and have nice char marks.
  7. Remove the skewers from the grill and let them cool for a minute before serving.

Notes
