1.5 pounds large shrimp (16/20 count), peeled and deveined
3 tablespoons olive oil
4 garlic cloves, minced
1 lemon, zested and juiced (about 2 tablespoons juice)
1 teaspoon smoked paprika (or sweet paprika)
1/2 teaspoon red pepper flakes (optional)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon honey or brown sugar (optional)
2 tablespoons fresh parsley, chopped
1 tablespoon melted butter for basting (optional)
Lemon wedges, for serving
8–10 wooden or metal skewers
Instructions
Soak wooden skewers in water for 20–30 minutes. Preheat the grill to medium-high (about 450–500°F).
Whisk olive oil, garlic, lemon juice and zest, paprika, red pepper flakes, salt, pepper, parsley, and honey (if using) in a bowl. Reserve 1 tablespoon for basting.
Pat shrimp dry and toss with the marinade. Let sit 15–20 minutes.
Thread shrimp onto skewers in a “C” shape, 4–6 shrimp per skewer.
Oil the grill grates again if needed, then place skewers on the hot grill.
Grill for 2–3 minutes on the first side. Flip, baste with reserved marinade or melted butter, and grill for 1–2 minutes more.
Remove to a plate and rest for 1 minute. Finish with a squeeze of lemon and extra parsley.
Notes
Dry shrimp well for better sear and do not overcook.
