Quick and satisfying Crispy Chicken Quesadillas with a golden exterior and cheesy filling, perfect for any meal.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning (optional)
  • Salt and pepper to taste

Instructions

  1. Start by heating a large skillet over medium heat and add the olive oil.
  2. Mix the shredded chicken with taco seasoning, salt, and pepper in a bowl.
  3. Lay one tortilla flat in the skillet and sprinkle half with cheese.
  4. Add a layer of seasoned chicken on top of the cheese, then top with a little more cheese.
  5. Fold the tortilla in half and cook until golden brown, about 3-4 minutes.
  6. Carefully flip the quesadilla and cook the other side until crispy and the cheese is melted, about another 3-4 minutes.
  7. Remove from the skillet, slice, and serve warm with your choice of dips like salsa or sour cream.

Notes

For a healthier twist, use whole wheat tortillas or low-fat cheese. For a vegetarian version, replace chicken with black beans or sautéed vegetables.
