Ingredients

  • Harusame noodles (glass noodles)
  • Vegetable or chicken broth
  • Carrots, sliced thinly
  • Bok choy or spinach
  • Shiitake mushrooms, sliced
  • Green onions, chopped
  • Soy sauce
  • Sesame oil
  • Optional protein: chicken, tofu, or shrimp

Instructions

  1. In a large pot, heat the vegetable or chicken broth over medium heat.
  2. Add the sliced carrots and mushrooms to the pot, allowing them to cook for about 5 minutes.
  3. Next, stir in the bok choy or spinach until it wilts, about 2 minutes.
  4. While the vegetables are cooking, prepare the Harusame noodles according to package instructions, usually soaking them in hot water.
