  • 2 pounds potatoes (Yukon Gold or red potatoes)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • ½ cup red onion, finely chopped
  • ½ cup celery, diced
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by washing the potatoes thoroughly and cutting them into bite-sized pieces.
  2. Boil the potatoes in salted water until they are tender, about 10-15 minutes.
  3. Drain the potatoes and allow them to cool for a few minutes.
  4. In a large bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  5. Add the cooled potatoes, red onion, celery, and hard-boiled eggs to the bowl and gently mix until everything is coated.
  6. Chill the potato salad in the fridge for at least 30 minutes before serving, allowing the flavors to meld.
  7. Garnish with fresh parsley if desired, and serve cold.
