A comforting and hearty chicken noodle soup that’s perfect for chilly days and nourishing for the soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender.
  2. Pour in the chicken broth and bring to a boil. Add shredded chicken, egg noodles, and thyme. Season with salt and pepper.
  3. Reduce heat and let it simmer for about 10-15 minutes or until the noodles are cooked al dente.
  4. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For added flavor, consider using homemade chicken broth or adding a bay leaf while the soup simmers. To thicken, use a cornstarch slurry at the end. Cook noodles separately if saving leftovers.
