A delicious twist on traditional burritos, perfect for a quick meal or family dinner, combining all the classic flavors in a customizable bowl.

Ingredients

  • 1 cup cooked rice (white or brown)
  • 1 can of black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup cherry tomatoes (halved)
  • 1 bell pepper (chopped)
  • 1 avocado (diced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salsa (for topping)
  • Sour cream or Greek yogurt (optional)
  • Fresh cilantro (for garnish)

Instructions

  1. Start by cooking your rice according to package instructions.
  2. While the rice is cooking, chop your bell pepper and halve the cherry tomatoes.
  3. In a large mixing bowl, combine the black beans, corn, bell pepper, and cherry tomatoes.
  4. Once the rice is cooked, let it cool slightly and then fluff it with a fork.
  5. To assemble, place a portion of rice in the bottom of each bowl.
  6. Layer the bean and veggie mixture on top of the rice, then add diced avocado and shredded cheese.
  7. Finish with a drizzle of salsa and a dollop of sour cream or Greek yogurt. Garnish with cilantro.

Notes

Store leftovers in an airtight container in the refrigerator. Warm each component separately when reheating.
