A delightful strawberry cheesecake that combines creamy richness with fresh strawberry flavor, perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 2 cups cream cheese
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • ½ cup strawberry jam (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. Beat the cream cheese and sugar together until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Pour the cheesecake mixture over the prepared crust.
  6. Bake for about 50 minutes, or until the center is set but still has a slight jiggle.
  7. Once cooled, top with sliced strawberries and optional strawberry jam before slicing and serving.

Notes

For a gluten-free version, use gluten-free graham crackers. Cream cheese can be swapped for a dairy-free alternative if needed.
