Bright berries, creamy yogurt, and crunchy granola come together in this simple and flexible parfait, perfect for breakfast, snacks, or light desserts.

Ingredients

  • 2 cups Greek yogurt (plain) or regular yogurt
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1 cup granola (store-bought or homemade)
  • 1 teaspoon lemon zest or a squeeze of lemon (optional)
  • 1/4 cup nuts or seeds (almonds, walnuts, chia, or flax; optional)
  • Fresh mint for garnish (optional)

Instructions

  1. Rinse the berries, pat them dry, and slice large berries like strawberries.
  2. In a bowl, whisk the yogurt with honey (or maple) and vanilla until smooth and creamy.
  3. For extra juiciness, toss some berries with a squeeze of lemon and a little honey; let sit for 5 minutes.
  4. Spoon a layer of yogurt into glasses or jars to make the base.
  5. Add a layer of berries and then a layer of granola. Repeat the layers until the glass is full.
  6. Heat the oven to 350°F (175°C). Spread granola on a sheet pan and bake for 8–10 minutes until crisp and fragrant; cool before layering.
  7. Finish with nuts or seeds, a light drizzle of honey, and mint. Serve right away, or chill for 10–15 minutes.

Notes

For make-ahead, keep granola separate to maintain its crunch. This parfait is best enjoyed same day for optimal texture.
