Baked Banana Blueberry Oatmeal

A warm, baked breakfast featuring ripe bananas, juicy blueberries, and hearty oats, perfect for meal prep and busy mornings.

Ingredients

  • 2 ripe bananas, mashed (about 1 cup)
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
  • 1 3/4 cups milk (dairy or unsweetened almond, oat, or soy)
  • 1 large egg
  • 1/4 cup maple syrup or honey (adjust to taste)
  • 2 teaspoons vanilla extract
  • 2 tablespoons melted butter or coconut oil
  • 1 1/2 cups blueberries (fresh or frozen)
  • Optional: 1/3 cup chopped nuts or seeds; 1 tablespoon coarse sugar on top

Instructions

  1. Heat the oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment.
  2. Mix the dry ingredients: oats, baking powder, cinnamon, and salt in a large bowl.
  3. Mash the bananas in another bowl. Whisk in milk, egg, maple syrup, vanilla, and melted butter or oil.
  4. Pour the wet mixture into the dry. Stir until the oats are evenly coated.
  5. Fold in about 1 cup of the blueberries (and nuts, if using). Pour into the pan and scatter the remaining blueberries on top. Sprinkle coarse sugar if desired.
  6. Bake at 350°F (175°C) for 35–40 minutes, until set in the center and lightly golden at the edges. If using frozen berries, add 3–5 minutes.
  7. Cool for 10 minutes to set. Slice and serve warm with a splash of milk or a spoon of yogurt. Drizzle with maple syrup if desired.

Notes

Use very ripe bananas for the best sweetness and moisture. Muffin cups bake in 20–25 minutes.
