A quick, tasty, and versatile dish featuring creamy avocado on crisp toast, perfect for any meal of the day.

Ingredients

  • 2 slices thick bread (sourdough, country, whole grain, or gluten-free)
  • 1 large ripe avocado
  • 1 teaspoon fresh lemon or lime juice
  • Pinch of kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon extra-virgin olive oil (optional)
  • Optional toppings: Red pepper flakes, sliced cherry tomatoes, microgreens, crumbled feta, poached egg, smoked salmon, sesame seeds

Instructions

  1. Pick a ripe avocado.
  2. Halve the avocado, remove the pit, and scoop the flesh into a bowl.
  3. Add lemon or lime juice, salt, and pepper.
  4. Preheat oven to 400°F (200°C) if using.
  5. Mash the avocado with a fork until mostly smooth.
  6. Brush bread lightly with olive oil for extra crunch (optional).
  7. Toast the bread until golden (5–8 minutes in the oven or 2–3 minutes in a toaster).
  8. Spread the mashed avocado on hot toast and top with olive oil and desired toppings.

Notes

Store components separately to maintain freshness. Mash avocado with lemon juice to prevent browning.
