These sheet pan tacos are a quick, flavorful dinner cooked all at once in the oven. Juicy seasoned meat and roasted vegetables come together in warm tortillas for an easy, family-friendly meal.

Ingredients

1 lb ground turkey, chicken, or lean beef

1 large onion, thinly sliced

2 bell peppers (any color), sliced

2 tbsp olive oil

2 tbsp taco seasoning or homemade blend

8โ€“10 small tortillas (corn or flour)

Optional toppings: shredded lettuce, avocado, salsa, cheese, lime wedges

Instructions

1. Preheat oven to 400ยฐF (200ยฐC).

2. Spread ground meat on one side of a sheet pan; scatter peppers and onions on the other side.

3. Drizzle everything with olive oil and sprinkle with taco seasoning.

4. Toss veggies lightly to coat.

5. Roast for 15โ€“20 minutes, stirring halfway through, until meat is fully cooked and vegetables are tender.

6. Wrap tortillas in foil and place on a lower rack during the last 5 minutes to warm.

7. Remove sheet pan from oven and spoon filling into tortillas.

8. Top with your favorite toppings and serve immediately.

Notes

Use lean protein or plant-based crumbles for a vegetarian option.

Homemade taco seasoning blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp garlic powder, ยฝ tsp salt, ยฝ tsp black pepper.

Store leftovers in airtight containers up to 4 days in the fridge or 2 months in the freezer.

Reheat filling in a skillet or microwave before serving.
